高胆固醇饮食负荷的大鼠表现出高胆固醇症状及脂肪肝，并观察到肝功能下降。Rice Kefiran给药组中，无论1.5%组还是3.0%组，转氨酶（GOT（AST）、GPT（ALT））活性均显著降低。根据该结果，提示Rice Kefiran具有改善肝功能的作用。
